Ok guys… if you know me, you know I am not a SALAD GIRL.. but I could legit eat this salad every day. Ok maybe like 4 times a week 😉

Here’s What You’ll Need:

Serves 2

2 cups mixed greens

1/2 cup brussels sprouts

2 large carrots

3 dates

1/2 avocado

1/4 cup parmesan


1 tablespoon olive oil

1 teaspoon Worcester

1 teaspoon minced garlic

Fresh ground pepper to taste

1/4 cup chopped walnuts

1 teaspoon honey

1 teaspoon shallots, finely chopped

What To Do:

Saute the brussel sprouts WITH THE WALNUTS for just a few minutes. Love myself some roasted walnuts! The flavor of them shine through this salad like no other flavor. lollll..

As you saute the brussels and walnuts, whisk together the dressing.

Wash and take the first layer off the carrots. Shred the carrots using a peeler into same bowl with mixed greens. Dice up the dates, and throw them on in.

Combine ALL in a salad bowl. Top with the avocado. Mix in parm. Toss!!!
