Low Carb Mashed Potatoes

This is such an easy side dish to make and a fan favorite because nobody will ever know there is cauliflower in these mashed potatoes. Extra nutrients, less carbs!

Here’s what you need:

3 cups peeled and diced potatoes

3 cups diced cauliflower

2 tbsp butter

1 clove of garlic, minced

Seasoning: salt, pepper, onion powder

1/2 cup cheese (I used a mix of cheddar and parm)

1/4 cup green onion, diced

Here’s how you make it:

Add potatoes and cauliflower to a pot of water and boil for approximately 15 minutes, or until fork tender

Then, use an immersion blender to mash the boiled potatoes and cauliflower (you can do this right in the pot) and blend until fully combined.

Then add in butter, garlic, onion powder, salt and pepper and mix well

Then add your mixture to a cast iron pan and top with a small sprinkle of cheddar and parmesan cheese and bake in the oven at 475 degrees for about 5 minutes or until your cheese is completely melted and starts to get a little brown!

Top with green onion and oh my goodness you guys…this is SO good! Hope you enjoy!
