Ok so this is actually the most amazing afternoon snack or late night treat if you’re looking for a bite of something sweet! These bars are not only delicious and pretty to look at, they’re actually super healthy too!!!

So first, I took 2 cups of low-fat blueberry Greek yogurt and used a spatula to spread it out into a thin, even layer on a parchment lined baking sheet! Greek yogurt is actually the best…so full of protein and probiotics!

Then, I sprinkled some granola on top! My granola had goji berries, crispy almonds and
unsweetened coconut chips! So all of these things just added an extra element to the texture and taste of these bars.

Next comes the fruit…my favorite!!! I absolutely love pomegranate seeds. They are so healthy, rich in vitamin c, potassium and fiber. They also contain a lot antioxidants which help protect your body against inflammation and free radical damage. I love when something that tastes so good is also good for you! I also added some strawberries because you know I couldn’t resist!

Then pop your tray right in the freezer! After about 1 hour (or 2, but not 3 because the greek yogurt can freeze weird) you can take it out and cut it up into bite size pieces or larger bars! However you decide to chop it up at the end, I can promise you it will be DELICIOUS! The creaminess of the Greek yogurt paired with the crunchy granola, tart pomegranate seeds and sweet strawberry slices is the perfect bite of something sweet 🙂
