The ingredients:
1 tbsp olive oil
1/2 small white onion, finely diced
2 cloves of garlic, minced
8 cups of spinach
2 or 3 tbsp of half and half
1/4 cup shredded mozzarella
1/4 cup shredded parmesan
2 tbsp butter
1/4 cup greek yogurt
Salt and pepper to taste
The recipe:
Add olive oil, onion and garlic to a sauté pan and cook for 2-3 minutes. Then add in spinach and cover for a minute or two until the spinach goes down. Add salt and pepper to taste.
Then add half & half and mix well. Then add shredded mozzarella and parmesan cheese, butter, greek yogurt and mix well.
It will be a little liquidy, so to finalize the dish, I added 1/2 tbsp of flour just to thicken it up and make it the perfect consistency!
I was planning to eat this with a fork but it actually tastes 10 times better with chips as a dip! But could absolutely be a great side dish for any meal.
