Healthier Buttermilk Blueberry Maple Muffins

Ingredients
  

For the Muffin

  • 1 1/4 cup flour
  • 1 egg
  • 1/3 cup buttermilk
  • 1/2 cup brown sugar (I used brown coconut sugar to make it healthier!)
  • 1/3 cup maple syrup
  • 1/2 cup Greek yogurt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup blueberries in flour
  • And 2 tablespoons blueberries smashed with my hands

For the Icing

  • 1/2 cup Greek yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions
 

  • It’s like a mix of blueberry muffins and blueberry pancakes!!!!
  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, combine your muffin ingredients with a mixer or spatula till there are no lumps. Wait to add blueberries till mixing is complete.
  • In your baking tins - either line with cupcake liners or use baking spray to prevent sticking.
  • Bake your muffins at approximately 15 minutes for minis.
  • While the muffins bake, in another bowl, combine your greek yogurt, maple syrup and vanilla extract to make your "frosting."
  • Take out your muffins and let cool before adding frosting!
  • Enjoy!
