If you’re looking for an EASY yummy app to make this week- this fresh grilled corn salad is AMAZING🤍 it can be served in many ways- side dish/salad, a dip, or like I did as bites!! It’s simple to prep because you really just throw it all in a mixing bowl.
When your corn is charred to your liking, set aside to allow to cool a little bit.
While your corn grills, dice your tomatoes, black beans, red onion, diced avocado, mixed bell peppers and finely chop your cilantro.
In a large bowl, combine the grilled corn kernels, diced tomatoes, black beans, red onion, diced avocado, mixed bell peppers, crumbled feta cheese, and finely chopped cilantro.
Squeeze the lime juice over the salad. Sprinkle with chili powder, seasoned salt, garlic powder, and paprika. Toss gently to combine all ingredients and coat them evenly with the seasonings.
Spoon the salad into Tostitos scoops for individual bites, or serve alongside your favorite chips or as a side dish with your main course! Enjoy!! xx
