Dairy-Free & Vegan High-Protein Penne Vodka Pasta

Ingredients
  

  • 2 cups penne pasta dry
  • 2 cups pasta water
  • 1 tbsp olive oil
  • ½ onion diced
  • tsp garlic minced
  • 2 tbsp tomato paste
  • 1-1½ tsp salt adjust to taste
  • 1 tsp black pepper
  • chili flakes for topping

For The Cream Sauce:

  • 1 cup cashews
  • 1 cup white beans rinsed
  • tbsp nutritional yeast
  • 1 tsp salt
  • 1 tbsp olive oil
  • ½ cup milk of choice (almond or oat)

Instructions
 

  • Soak cashews in warm water for at least 20 min. Drain and rinse. Blend soaked cashews, white beans, nutritional yeast, salt, olive oil, and milk until smooth. Set aside.
  • Boil penne in very salty water until al dente. Reserve 2 cups pasta water and set aside. Drain pasta.
  • In a large pan, heat 1 tbsp olive oil over medium heat. Add diced onion and sauté for 5 min until translucent.
  • Add garlic and tomato paste. Use ½ cup reserved pasta water to thin the tomato paste into a smooth mixture.
  • Add the blended cream sauce to the pan. Stir in 1 cup pasta water, saving an additional ½ cup if the sauce is too thick. Season with 1 tsp salt and 1 tsp pepper.
  • Pour in cooked penne to the sauce and stir to coat evenly. Adjust thickness with reserved pasta water as needed.
  • Top with chili flakes for a little heat. Serve warm and enjoy a creamy, high-protein pasta!
