Today’s recipe is an old one (I had a similar one last year!!) that I re-invented to taste even BETTER. It’s the perfect Fall/Winter comfort food soup! My fam absolutely loved it. It has lots of veggies in it, and tastes super creamy even though it’s dairy free! Delightful AND guilt free. Try it and let me know what you think!
INGRIDIENTS:
3 Large Carrots
3 Sweet Potatoes
1/2 Onion
2 Cloves of Garlic
2 Cups of Chicken Broth (use vegetable broth to make this completely vegan)
1 Cup of Cauliflower
1/4 Cup Olive Oil
Optional Parsley to top the dish off
1/2 Teaspoon Cumin
1/4 Teaspoon Garlic Powder or Salt
Salt and pepper to taste
STEPS:
Cut up the carrots, and then boil them.
Place the Cauliflower to boil with the carrots as well.
Cut up the sweet potato and onions, and saute them with garlic and a touch of olive oil.
Toss in all the spices, the broth, and half of the olive oil.Â
Blend it all up, then place it BACK into the saucepan to simmer and reheat all the flavors together.
Let it simmer for at least 10-15 minutes.
Then it is ready to go! Feel free to garnish it off with some parsley! SO YUMMYYYYY!
