Preheat oven to 375°F.
In a large bowl, add the egg, MULU cottage cheese, cheddar cheese, chives, diced jalapeño, flour, baking powder, baking soda, salt, and garlic powder. Stir until a thick, sticky dough forms (don’t overmix, but make sure no dry flour remains!)
Scoop dough into 8 even mounds onto a lightly oiled baking sheet and top each biscuit with a jalapeño slice!
Bake for 20–23 minutes, until tops are golden and centers are set.
Let cool for about 5 minutes, then enjoy!
