Creamy, Roasted Vegetable Spaghetti with Ground Turkey
This hearty and creamy pasta dish is the perfect way to use up leftover veggies in your fridge — all in under 40 minutes. The roasted cream cheese gives the sauce a rich flavor without needing a ton of ingredients. It’s cozy, simple, and high in protein!

Preheat oven to 400°F.
Slice all veggies and spread them on a baking sheet. Drizzle with olive oil and season with salt and pepper.
Add dollops of cream cheese on top of the vegetables — don’t worry about mixing; they’ll melt into the sauce after roasting.
Roast veggies for 20–25 minutes until softened and slightly golden.
While veggies roast, boil spaghetti according to package instructions and brown ground turkey in a skillet until cooked through.
Once veggies are done, combine them with the cooked spaghetti and ground turkey in a large pan or mixing bowl.
Toss to combine, letting the roasted cream cheese melt and coat everything for a creamy finish.
