Mini Cauliflower Crust Pizzas
So I picked up these mini cauliflower thins on my last Trader Joes run and I was CRAVING pizza tonight for dinner so I decided to go for it! And let me tell you…they came out SO GOOD! This is such an easy weekday meal because you can whip it up in seriously under 5 min!! It's also a perfect way to get in some hearty comfort food that you can actually feel good about! And you can literally put anything on these mini pizzas, so it's a great way to use up any leftover veggies/meats that you have in your fridge!

Preheat oven to 400°F and place cauliflower thins on a baking sheet.
Bake crusts for 10 minutes or until lightly crispy.
While crusts bake, sauté sliced zucchini, onion, and mushrooms in a pan for 3–4 minutes to soften.
Remove crusts from oven and spread sauce — pesto on two, tomato sauce on the other two (or mix and match however you like!).
Top with cheese and sautéed veggies. Add any additional toppings like chicken, turkey pepperoni, or olives if desired.
Return to oven and bake for 5–8 more minutes until cheese is melted and bubbly.
Optional: Broil for 1–2 minutes for an extra crispy top. Enjoy!! xx
