Made a quick and healthy pasta for dinner! It was delicious, creamy and garlicky and I loved every bite!
Here’s what you need:
1 cup broccoli
1/2 onion, chopped
1 cup of chopped kale
Edamame pasta (I used edamame but you can use whatever type of pasta you like!!!)
1 cup cauliflower
3 tbsp olive oil
1/4 cup parmesan cheese
1/2 tsp Onion powder
1/2 tsp Garlic Salt
1 clove of garlic
Salt and pepper to taste
1/3 cup milk (I used oat milk but you can use whatever milk you like)
Here’s how you make it:
Add chopped up cauliflower to a pot of boiling water and boil for about 10 minutes or until fork tender
In a frying pan, sauté your chopped onion, kale and broccoli on medium heat for about 10 minutes or until it looks nice and crispy and the broccoli has softened to your liking
In another pot, bring water to a boil and cook your pasta according to the package
In a blender, add the cauliflower, olive oil, parmesan cheese, garlic, garlic powder, onion powder & milk and blend until creamy
Last step: mix together your pasta veggies and sauce! I topped mine off with more parmesan cheese and basil. SO GOOD!!!
