Creamy Mushroom Spaghetti Squash & Meatballs

I made this recipe last night for dinner and it was truly truly phenomenal!!! Full disclosure though, this recipe is not quick to make but it is FREAKING DELICIOUS !!!!! Creamy mushroom sauce with spaghetti squash and chicken meatballs (you can use ground turkey or beef too)!!!

Here is what you need:

1 lb ground chicken

1/3 cup parmesan cheese for the meatballs

1/4 cup chopped chives (you will need this for both the meatballs and the sauce)

1 whole spaghetti squash

1 package of mushrooms, sliced

1/4 cup half n half (you can use really any type of milk or cream)

1/3 cup parmesan cheese for the mushroom sauce

2 cloves of garlic

1/4 cup chicken stock

2 tbsp butter

2 tbsp flour

Seasonings to taste: salt, pepper, garlic powder

Here is how you make it:

Spaghetti Squash: First cut up your spaghetti squash into circles (to cut the squash easier, poke with a few holes and microwave it for 2 min! Makes it so much easier)! Then bake in the oven with olive oil and garlic salt at 400 for 1 hour or until fork tender. Let cool for 5 minutes and pull into spaghetti pieces and set aside for later!

Meatballs: In a large mixing bowl, mix together the ground chicken, parmesan cheese, chives, garlic powder, salt and pepper and form into 1 inch balls and fry in frying pan on medium heat for about 10 minutes or until crispy on the outside and cooked all the way through! Make sure you’re turning them every other minute so you cook all sides evenly. You can cut one open to see if it’s fully cooked if you’re not sure if they are ready! Once the meatballs are done, put them on a plate and pat them dry with a paper towel to get rid of the excess oil.

Mushroom sauce: Take your meatballs out of the pan, add your sliced mushrooms and cook for about 4-5 minutes or until the have softened. Add crushed garlic, half n half, butter, chicken broth, parmesan cheese, chives and flour. Salt and pepper to taste! Simmer until its the perfect consistency of mushroom Parm cream sauce!

Last step: mix everything together and top with more parmesan cheese!!! SO cream and so delicious I hope you guys enjoy!!
