I made the best lunch today that I think I have honestly ever made! Mediterranean chicken pitas with a side arugula salad…so fresh and so many good flavors! I could literally eat this every single day for lunch!
Here’s what you need:
4 chicken tenders
1 whole wheat pita
1/2 avocado
1/4 red onion, sliced
1/4 cup chopped tomatoes
1/4 cup sliced cucumber
2 green onions, chopped
1/4 cup feta
handful of dill
1/4 cup tzatziki
1 cup of arugula
1 tbsps olive oil
Here’s how you make it:
Cook chicken tenders in a sauté pan with olive oil, garlic salt, onion salt, and lawrys salt for about 10 minutes (or until cooked through) and cut up into smaller, bite-sized pieces
Cut open pita and add tzatziki sauce to all sides
Add all of your fresh vegetables and feta to the pita
Now for the salad: drizzle olive oil or your favorite vinaigrette on top of arugula, then add feta and top with dill! Hope you guys enjoy just as much as I did!
