Creamy Chicken Tortilla Soup

Ingredients
  

  • 1/2 onion diced
  • 1/2 cup corn
  • 2 medium tomatoes diced
  • 1 bell pepper diced
  • 2 jalapeños diced
  • 1/2 cup black beans
  • 1/2 cup kidney beans
  • 1/4 chopped cilantro
  • 1.2 lbs chicken breasts
  • 40 ounces of chicken broth
  • 1/4 cup Heavy Cream
  • Toppings: shredded cheese tortilla chips, green onion, avocado

Instructions
 

  • Add all veggies in a pan and then add spices and olive oil
  • Next, add in chicken broth and bring to a boil
  • Once the soup is boiling, add chicken breast and cook for about 10-12 minutes or until done (cooking the chicken with the veggies and the broth gives it an incredible flavor)
  • Then take out the chicken breasts and shred it on the side and then put the shredded chicken back in the pot with the veggies and broth!
  • Now it’s time to add the heavy cream and let simmer for about 5-7 minutes
  • Top the soup with cheese, tortilla chips, green onion, avocado!! Enjoy!
