Chilled Caribbean Rice Dish
Hi everybody!!! This is one of my favorite side dish recipes to meal prep and save for the week. ORRR it's a GREAT thing to take to summer BBQs or parties. I love pairing this with grilled chicken or salmon and it's so good.It's a childhood fav, with a littttle healthier spin. Besides all the chopping of the veggies, it's pretty simple to make. BUT, it does need a bit of time to chill in the refrigerator.

Cook the rice according to the package. As it’s cooking, chop the peppers up, the green onions, and rinse off the black beans.
Get out a nice big salad bowl, as seen in the pictures. Place the cooked rice, veggies, and start measuring out all the spices and dressing ingredients. Mix all together. Chill for a minimum of 2 hours.
BOOM! You’re done! Simple, but insannneeeely tasty!
