This Chicken Nugget Bowl is a quick and easy weeknight meal that’s packed with flavor and nutrients! Crispy, golden chicken nuggets paired with a savory rice and veggie mix make this a satisfying and wholesome dish.
Here’s how you make it:
In a bowl, whisk together one egg. In a separate bowl, add breadcrumbs.
Cut up chicken tenders into smaller, nugget sizes pieces and then dip each pieces into the egg wash and then coat with breadcrumbs.
Add the breaded chicken pieces to a frying pan coated with olive oil and cook on medium heat for about 8-10 minutes or until golden brown, flipping halfway through. I always cut the thickest piece when I’m cooking just to make sure that the chicken is fully cooked through!
Then in another frying pan, add rice, cauliflower rice, peas, spinach, butter and seasoning and cook for about 8 minutes on medium heat.
Put the rice mixture in a bowl, add chicken nuggets, and top with parmesan and chopped chives! I’m telling you guys, this meal is SO easy and SO delicious…a perfect weeknight meal idea!
