Chicken Flautas

These chicken taquitos are SO GOOD and SO EASY to make! You can really use whatever veggies and protein you have in your fridge!

Here’s what you need:

2/3 cup shredded chicken (I had some cooked chicken leftover from the night before so I just cut that up and reheated it with my veggies, but you could also use rotisserie chicken or just start with fresh chicken as well!)

1/4 cup corn

1/2 cup mushrooms, diced

1 tsp taco seasoning

1/2 onion

2 large flour tortillas

4 tbsp refried beans (2 ish tbsp for each tortilla. Feel free to do more. I get vegetarian refried beans so it is without the Lard lol)

1/4 cup shredded cheese

2 tbsp avocado oil (for frying)

1/2 Avocado

Sauce: 1 scoop sour cream, 1 tsp hot sauce and 1 tbsp honey vinaigrette

Here’s how you make it:
Sauté chicken, corn, mushrooms, onions in a frying pan w/ taco seasoning and a little oil until fully cooked and chicken is crispy and veggies have started to brown.
 
 
Next, get out your tortilla. Spread refried beans on tortilla. You can do it straight from the can- as weird as that might be. Then add your chicken/veggie mix and top with cheese
 
 
Roll them up and fry in avocado oil for 2 mins on each side
 
 
For the sauce: mix 1 scoop sour cream, 1 tsp hot sauce and 1 tbsp honey vinaigrette
 
 
Add avocado on the side!!
