Total Time 20 minutes
Course Appetizer, Main Course

Ingredients

  • 2/3 cup shredded chicken leftover, rotisserie, or freshly cooked
  • 1/4 cup corn
  • 1/2 cup mushrooms diced
  • 1/2 onion diced
  • 1 teaspoon taco seasoning
  • 2 large flour tortillas
  • 4 tablespoons refried beans about 2 tablespoons per tortilla, more if desired; I use vegetarian refried beans
  • 1/4 cup shredded cheese
  • 2 tablespoons avocado oil for frying
  • 1/2 avocado sliced

For the Sauce

  • 1 scoop sour cream
  • 1 teaspoon hot sauce
  • 1 tablespoon honey vinaigrette

Instructions

  • In a skillet, heat a drizzle of oil over medium heat. Add shredded chicken, corn, mushrooms, onion, and taco seasoning. Sauté until the chicken is heated through and crispy, and the veggies are tender and lightly browned.
  • Spread refried beans onto each flour tortilla (straight from the can is fine!). Top with the chicken and veggie mixture, then sprinkle shredded cheese on top.
  • Roll up the tortillas tightly. Heat avocado oil in a skillet over medium heat. Fry the flautas for about 2 minutes per side, until golden and crispy.
  • In a small bowl, combine sour cream, hot sauce, and honey vinaigrette. Mix well.
  • Plate the flautas with sliced avocado on the side, and drizzle or dip with the sauce. Enjoy!! xx
