Creamy Fried Chicken

This is one of my favorite family recipes that we make around the holidays! It’s so delicious, creamy and comforting and it’s so great to make for a crowd!
Here’s what you need:
1 whole packet of boneless skinless chicken breast tenders (aprrox 8 pieces or 1.4 lbs chicken)
1/2 cup flour
1 cup breadcrumbs
3 eggs
2/3 cup whipping cream
1/3 cup half and half
1 cup parm
Salt and pepper
2.5 tbsp chopped parsley
8 slices of mozzarella cheese
Oil to fry chicken
Here’s how you make it:
First, grab two different bowls. One to whip the eggs like you’re about to make scrambled eggs. The other mixing the breadcrumbs and flour. Dip your tenders into the egg wash, then dip in breadcrumbs/flour mix (make sure the entire piece of chicken is fully covered)
Then pan fry the breaded chicken in oil for about 5 minutes on each side, and place the fried chicken in baking dish
In separate saucepan combine heavy cream, half and half, parmesan cheese, parsley, salt and pepper and simmer for about 5 minutes
Place slices of mozzarella over each pice of chicken and then pour the entire cream sauce on top!
Bake at 350 degrees for 20 minutes. I’m telling you guys, this is going to be a HIT at your next dinner party!
