The perfect thing to make as an appetizer, for a sports game, or as a fun snack! And maybeee when you serve this, nobody will even know that it’s BROCCOLI!
Very easy and basic recipe: (I’d double this recipe if you’re looking to make it for more peeps)
Ingredients:
1/2 finely diced medium shallot
2 eggs
1/2 cup breadcrumbs (or panko!)
2 Cups broccoli (or 2 heads, or 1 bag)
Sprinkle of Salt and pepper
Sprinkle of Garlic salt
Olive oil spray (or canola oil spray, for pamming the pan!)
1/2 cup shredded low fat cheddar cheese
STEPS:
Boil the broccoli for 3-4 min. Take most of the thick stems off. You don’t want them too soggy and well done, but you need the broccoli a lil soft.
Pat down the broccoli with a paper towel to remove excess moisture.
Throw the broccoli into a bowl, and you can use your hands to tear apart into smaller pieces.
Throw in the diced shallots, eggs, seasoning (salts and pepper), and breadcrumbs.
Mix all together.
Spray cookie sheet.
Place the mix into small tater tot forms. Cook for about 20 min at 375 or until golden brown!!
SO GOOOOOOD!!!! Top with some more salt:) I paired these tots with other good apps, like mushroom caps, caesar salad and zoodles!
