The ingredients:
1.5 cups cauliflower rice
1 pepper (or 1 cup peppers if you bought mixed)
1/2 red onion
1.5 cups rotisserie chicken, shredded
1/3 cup cheese
1/2 avocado
1/2 lime
The recipe:
Start by laying out the diced peppers and sliced onions on a baking sheet. Bake at 420 for 12 min lightly coated with olive oil and fajita seasoning.
Meanwhile, make the cauliflower rice. Sauté for 5-7 min with a little olive oil and fajita seasoning.
Set aside the cauliflower rice, and I used the same pan for heating the chicken. The chicken was pre cut up from rotisserie chicken. I did a little olive oil, fajita seasoning, garlic powder and pepper.
Then, make a simple guac, just half an avocado, squeeze of lime, garlic powder salt and pepper.
Make your bowl! I liked cheese over my cauliflower rice, and microwaved for a few seconds until it melted. Then added the rest of the ingredients!!
