15 minute Low Carb Fajita bowls

Whip up these 15-minute Low Carb Fajita Bowls for a quick and tasty meal that's light on carbs but big on flavor. With cauliflower rice, tender rotisserie chicken, and fresh toppings, it’s an easy, delicious dish perfect for busy days!

Ingredients
  

  • 1.5 cups cauliflower rice
  • 1 cup bell pepper, sliced
  • 1 cup red onion, sliced
  • 1.5 cups rotisserie chicken, shredded
  • 1/3 cup cheese
  • 1/2 avocado
  • 1/2 lime, to juice
  • 1 teaspoon fajita seasoning
  • 1 teaspoon garlic powder
  • Salt & pepper, to taste

Instructions
 

  • Start by laying out the diced peppers and sliced onions on a baking sheet. Bake at 420 for 12 min lightly coated with olive oil and fajita seasoning. 
  • Meanwhile, make the cauliflower rice. Sauté for 5-7 min with a little olive oil and fajita seasoning. 
  • Set aside the cauliflower rice, and I used the same pan for heating the chicken. The chicken was pre cut up from rotisserie chicken. I did a little olive oil, fajita seasoning, garlic powder and pepper. 
  • Then, make a simple guac, just half an avocado, squeeze of lime, garlic powder salt and pepper. 
  • Make your bowl! I liked cheese over my cauliflower rice, and microwaved for a few seconds until it melted. Then added the rest of the ingredients!!
