Vegan Tofu Rice One Pan Dinner

This recipe is packed with protein, veggies, healthy fats, and it’s so delicious! Makes it so easy to make with one pan and not many dishes. Added bonus: it’s vegan! Hope you enjoy!

The ingredients:

8-12oz tofu, pressed and diced

2 large carrots, peeled and diced

1 cup chopped broccoli

1/3 onion, diced

1 tbsp olive oil

Seasoning: 1/2 tsp garlic powder, 1/2 tsp onion powder, and a couple dashes of pepper

1 cup uncooked rice

3 cups of water

The sauce:

2 tbsp peanut putter

2 tbsp soy sauce

1 tbsp of teriyaki

1 tsp rice wine vinegar

Optional toppings: diced green onion, avocado and sesame seeds

The recipe:

Drain out all the water in your tofu and chop into small pieces. Add to a frying pan on medium heat with 1 tbsp olive oil.

Add diced broccoli, carrots and onion. Then add garlic powder, onion powder and pepper and let it all cook together for about 5 minutes on medium heat.

Add 1 cup of uncooked rice and 3 cups of water. Stir and then wait until it starts to simmer and then cover.

When the rice is almost done and there is still a little bit of water left, throw in the peanut butter, soy sauce, teriyaki and rice wine vinegar. You can always add more of any of these ingredients, but start with this amount and then taste to see what you need more of!

Stir, cover and simmer for a few more minutes.

Optional: Top with diced green onion, sliced avocado and some sesame seeds! You could also top with sriracha or chili oil too if you like it a little spicy!
