My first recipe in the new house! I’m so excited to share this one with you, whipping up this turkey chili is so simple—loaded with protein, veggies, and all the cozy vibes. Perfect for meal prep or a quick weeknight dinner that’s healthy and satisfying. Don’t forget to top it off with avocado and tortilla chips for the perfect finishing touch!
The recipe:
Heat a large pot over medium heat and add a little oil. Add the ground turkey to the pot and cook, breaking it up with a wooden spoon or masher, until browned (about 5-7 minutes).
In the same pot, add a little more oil if needed. Add the diced onions, carrots, spices, and minced garlic. Sauté for 5-7 minutes, until the onions are soft and translucent.
Stir in the tomato paste and cook for about 2 minutes to deepen the flavor. Pour in the crushed or diced tomatoes, white beans and broth. Stir everything together.
Bring the mixture to a boil, then reduce the heat and let it simmer for 30-45 minutes, stirring occasionally. The chili should thicken, and the flavors will meld together.
Taste the chili and add salt, pepper, or more chili powder to taste.
Ladle the chili into bowls and top with a dollop of sour cream/greek yogurt, cheese, avocado slices, diced green onion, and crushed tortilla chips, if desired- yet highly recommended;)
