High Protein Mexican Casserole

Love how easy this dish is to make and is packed full of healthy protein! From the ground beef to the beans to the eggs, it is loaded with protein and amazing flavors!! Feel free to add more or less chiles depending on your spice preference!!

1 package / 12 oz ground beef (or ground meat of your choice)

2/3 cup bell pepper, diced

2/3 cup red onion, diced

2/3 cup black beans

2/3 cup white rice, cooked

1/4 cup diced chiles

4 eggs, whisked

1 cup Mexican-style cheese

Options to top:

Avocado

Cilantro

Jalapeños

Sour cream

Hot Sauce

Tomatoes

Seasonings: salt and pepper to taste, taco seasoning, garlic powder

The recipe:

Preheat your oven to 350 degrees.

In a large skillet, saute your ground beef, diced red pepper, and diced red onion. Saute until the meat is no longer pink.

Season with your taco seasoning, garlic powder, and salt and pepper to taste.

Add your black beans to the pan, along with your cooked rice and chopped chiles.

Once combined, transfer to a deep baking dish.

In a separate bowl, whisk together eggs, pour over your dish and mix. Then, mix in cheese. Feel free to save some cheese to top the casserole, too.

Bake at 375 for approx. 25-30 minutes.

Top with your choice. Enjoy!! xx
