SO. GOOD. Plus this dish is great as is, or can be enjoyed over any pasta of choice or with bread!!
The recipe
First make your chicken meatballs! Combine the ground chicken, an egg, seasonings in a bowl and mix. Form meatballs from the mix.
On medium stove top heat, drizzle a little olive oil in a pan, and toss in (gently! because these are flourless they’re a little more flexible!) the meatballs. Cook for a few min on each side, then leave on low heat for 5 minutes to ensure they’re full cooked.
Once cooked through, remove the cooked meatballs from the pan.
Dice your onion and half your tomatoes.
In the same pan you used for the meatballs, toss in onions, tomatoes, garlic (minced or freshly diced), a little more olive oil, and a little more Italian seasoning in the pan.
Let the tomatoes blister on each side, cooking for around 5 minutes each side of the tomato, on low to medium heat.
Add in your marinara or vodka sauce, with a small splash of water.
Throw in the spinach and basil.
Simmer on low for all the flavors to combine for a few min, then place the meatballs right on top of the tomato, spinach dish.
Turn your stove off, and place your burrata on top.
Garnish with some more fresh basil!
Feel free to eat this as is or over pasta! DELISH!!!!!
One-Pan Tomato Burrata Chicken Meatballs

8medium-sized tomatoes(I'm using "cocktail" tomatoes)
1cupmarinaraor vodka sauce
1tablespoonolive oil
3cupspacked spinach
1/3cuppacked fresh basil,finely chopped
6-8ouncesburrata
More italian seasoning, salt + pepper!
