My FAV Summer Salad | Beets, Tomatoes, Warm Goat Cheese

This is a PERFECT salad to make!! It's light, healthy, easy and yummy!! And if you've been a follower of mine for a little now, you know I am NOT a big salad girl .. hahah I love my REAL hearty meals, but this salad is soooo good!

Ingredients
  

For the Salad

  • 4 cups mixed leafy greens arugula, spinach, or spring mix
  • 1 medium tomato diced
  • 1 cup cooked beets diced (store-bought or roasted)
  • 1 avocado sliced
  • cup goat cheese about 2 oz, formed into patties

For the Dressing

  • 4 Tbsp extra-virgin olive oil
  • ½ tsp red wine vinegar
  • ½ tsp white wine vinegar
  • ½ tsp Worcestershire sauce
  • Juice of ½ lemon about 1 Tbsp
  • Salt and pepper to taste

Instructions
 

  • In a large salad bowl, place in the greens, diced tomatoes, diced beets, and avo. For the goat cheese, I love frying it in a sauce pan with a little bit of olive oil. Only for about 3-4 min. Top the warm/fried goat cheese on top of the sauce. Toss in the sauce with a little more salt and pepper. YUM!
