Meal Prep Mediterranean Salad (Mason Jar Style)
This Mediterranean mason jar salad is perfect for easy, protein-packed lunches! You can keep it meatless (like I do for Meatless Mondays) or add shredded chicken for extra protein. Thanks to hearty white beans, it’s super satisfying either way!

Prep your optional chicken ahead of time, I'm using rotisserie chicken!
Dice the cucumber and red onion, halve the cherry tomatoes, and pack the arugula.
Make the dressing by adding lemon juice, salt, olive oil, and pesto to the bottom of the jar. Stir to combine.
Layer the ingredients in this order: White beansCherry tomatoesShredded chicken (optional light add-in)CucumberRed onionArugulaFeta (optional sprinkle on top)This order keeps everything fresh and prevents sogginess. Seal and store in the fridge for up to 3 days. When ready to eat, shake well and enjoy straight from the jar or pour into a bowl!
