Turn your favorite pizza flavors into bite-sized perfection with these easy, protein-packed Pizza Bagel Bites! Made with a simple cottage cheese dough, they’re the perfect snack or appetizer that’s ready in no time.

The recipe:
Preheat your oven to 375°F.
In a large bowl, combine flour, cottage cheese, salt, garlic powder, onion powder, and baking powder. Mix well until a dough forms. This should take a few minutes.
Transfer the dough to a clean surface lightly dusted with flour. Knead for 2–3 minutes to bring the dough together and eliminate air pockets. Use the base of your hand to press the dough away from you, then fold it back toward you. Add a tiny bit of flour every couple of folds to prevent sticking.
Divide the dough in half. Use one half for the pizza bagel bites and save the other half to make bagels for breakfast, or double the recipe to make more servings! Wrap the unused dough tightly in plastic wrap and refrigerate for up to 2 days.
Lightly grease a mini muffin tin. If you don’t have one, a cookie sheet works too; simply shape the dough into small, flat rounds to hold the fillings.
Roll the dough into 1/2-inch balls and flatten them. Press each piece into a muffin cup, ensuring it covers the sides thinly and evenly.
Whisk the egg (or egg whites) and lightly brush the tops of the dough with the egg wash to help achieve a golden-brown finish.
Bake the cups for 14–15 minutes, or until the edges are golden. The tops should not be fully baked at this stage.
Remove from the oven and carefully spoon a little marinara sauce into each cup, leaving room for the cheese. Add shredded mozzarella, ensuring some cheese touches the edges for crispy, caramelized goodness.
Sprinkle with dried parsley or oregano for added flavor!
Return to the oven and bake for an additional 3–5 minutes, or until the cheese is melted and bubbly. Allow the cups to cool slightly before removing them from the tray. Serve warm and enjoy!
