5 cups cooked pasta
3 cups raw broccoli, diced
1 and 1/2 cucumber, diced
1 cup tomatoes, diced
1 cup red onion, diced
1 and 1/2 cup hard boiled eggs, diced (Approximately 4 eggs)
3 cups grilled chicken tenders, diced
1/3 cup greek yogurt
1/3 cup mayo
1 tbsp olive oil
1 tbsp ranch powder
1/2 tsp garlic powder
Juice from 1/2 lemon
1/2 tsp pepper
2 tbsp fresh dill
1 tbsp apple cider vinegar
Cook pasta according to package
Prep all of your veggies: dice up broccoli, cucumber, red onion and tomatoes
Sauté your chicken tenders in olive oil, lawry’s salt, garlic powder and pepper for about 10 minutes on medium heat ( 5 minutes on each side) or until fully cooked. Then diced it up into bite sized pieces.
Hard boil some eggs and then once they have cooled, dice up into smaller pieces. I used 4 for this recipe but feel free to adjust to your liking!
In a small mixing bowl, add all dressing ingredients and mix until well combined!
In a large mixing bowl, add pasta, diced veggies, chicken and egg and mix. Then add dressing and mix again until everything is evenly coated!
I added a little cheddar cheese as well but that’s optional! I highly suggest it though!
