2 1/2 cups broccoli
1 cup onion, diced
1 1/2 cup carrots
2 cups spinach
Anywhere between 12-16 oz ground turkey (depends on your package)
1 1/2 cups rice
4 1/2 cups water
1 1/3 cups cheese (1/2 cup inside and the rest on top)
Dice up broccoli, carrots and onion and add to a frying pan with some olive oil on medium heat. Then add in ground turkey and cook for 8-10 minutes or until the ground turkey is cooked. You don’t need to worry about the veggies being fully cooked as they will continue to cook in the oven!
Add veggie and ground turkey mix to a large glass baking dish. Then add spinach, rice and water and bake at 400 degrees for 45-50 min stirring 1 or two times half way
Then, take it out of the oven, add cheese and mix well, then put it back in for 8 min so that the cheese fully melts.
