Chicken Burrito

Here’s what you need:

1 cup white rice

1/2 cup salsa

Couple dashes of garlic powder and chili powder

1/2 cup black beans

1 cup shredded chicken (i just used rotisserie chicken)

1/4 red onion, chopped

2 tortillas (I’m using a gluten-free sweet potato tortilla)

1/2 avocado

Toppings: shredded cheese, sour cream, hot sauce

Here’s how you make it:

In a pot, cook your white rice according to package -but add in salsa, garlic powder and chili powder while it’s cooking and you will have THE BEST salsa infused reice

In a pan, heat up your pre-cooked shredded chicken and chopped red onion in some olive oil, garlic powder and salt. Cook until the onion softens and the chicken starts to get brown and crispy, about 10 minutes.

In the same pan, add some black beans and cook for 2-3 minutes, or until heated!

Now it’s time to make your burrito: take a warm tortilla, top with salsa infused rice, shredded cheese (so it melts), chicken and onions, black beans. Top with sour cream avocado and some hot sauce!
