This sheet pan dinner is the perfect choice if youโre looking for a hassle-free evening meal that has minimal dishwashing but bursts with delicious flavors! Itโs also so convenient for meal prep and packed with nutritious goodness!!
The recipe:
Preheat your oven to 375 degrees.
Prep your veggies by chopping your red onion and bell peppers into long skinny pieces, peel and dice your potatoes and slice your sausage into thin pieces (appx. 1/4 inch thick).
On a baking sheet, add your chopped bell peppers and onions, diced potatoes, and sliced sausage. Season with generously with cajun seasoning!
Drizzle a little olive oil over your baking sheet and bake in the oven at 375 degrees for 30 minutes.
Now itโs time to make your Cajun-inspired creamy sauce! In a bowl, combine mayo, water, hot sauce, olive oil, Cajun seasoning, and a pinch of salt. Stir till smooth and thoroughly combined.
Serve up your sheet pan dinner in bowls & top with your creamy cajun sauce! Enjoy!! xx
