The recipe:
In a bowl, mix the shredded rotisserie chicken with buffalo sauce and garlic powder. Stir until the chicken is evenly coated.
In your skillet, on medium, melt your butter then lay one flour tortilla down. Sprinkle half of the cheddar and Monterey Jack cheeses on one half of the tortilla.
Spread the buffalo chicken mixture over the cheese, then top with the remaining cheese.
Once melted, place the tortilla in the skillet, fold it over, and press gently with a spatula. Cook for 2-3 minutes on each side, or until golden brown and crispy.
Remove from the skillet, slice into wedges, and serve with a dollop of Greek yogurt, green onions, & sliced avocado!!
