Brussels Sprouts Salad Inspired by Elephante
I love love love the Brussels sprouts salad from Elephante and I decided to put my own spin on it by adding some pesto because honestly, who doesn't like pesto. Hope you guys love this salad as much as I do, it is so easy and so yummy!

Prep your Brussels by either shaving them if they're whole or sometimes I like to cheat and use the pre-shaved Brussels from the grocery store.
In a skillet on medium heat, add a drizzle of olive oil and add in your pine nuts. Toss or stir occasionally for about 3-5 minutes – don't neglect them or they definitely may burn!
To make the dressing, combine olive oil, a lemon, pesto, pepper and salt in a bowl.
Once the pine nuts have been toasted, in a large bowl add your Brussels, nuts, dressing and grated parmesan. If you have an avocado, feel free to add it is such a great addition to this salad!!
