A perfect weekend breakfast idea!
Here’s what you need:
4 eggs
1 large potato, diced
1/2 onion, chopped
1/2 cup corn
green onions
(2 servings)
Here’s how you make it:
In a frying pan, cook the potato, corn and onion in olive oil until golden brown and fork tender! About 7-8 minutes!
Then just crack your eggs directly over the potato mixture and cook to your liking.
Top with chopped green onion, salt and pepper! You could add some crushed red pepper flakes as well if you like some heat!
