This one pot turkey sausage and vegetable stew is actually the easiest dinner that you can whip up on any day of the week!
In a large pot, add olive oil, garlic and onion and cook on low for about 5 minutes or until the onion becomes translucent. Then add in your turkey sausage and cook on low for about 5 minutes. Next add in all of your veggies…I used zucchini, yellow squash and red pepper. Sauté in the pot until the veggies are fork tender! Last but not least, add in your favorite tomato sauce and you have a hearty, healthy and comforting one-pot meal! Enjoy xx
