This Simple Mediterranean Pasta Salad is fresh, flavorful, and SO satisfying. It’s perfect for meal prep, picnics, or a light lunch, especially during these summer months!
SERVING SIZE: 4-6 SERVINGS
Ingredients:
1.5 cups dry Ditalini pasta
1.5 cups cucumber, diced
1.5 cups cherry tomatoes, diced
2 cups shredded chicken
1/2 cup red onion, diced
1 cup feta cheese, crumbled
1.5 cup white beans, drained and rinsed
1 tbsp Mediterranean seasoning
1 tsp garlic powder
1 tsp black pepper
1 tsp salt
1.5 tbsp lemon juice
2 tbsp olive oil
2 tbsp mayo
The recipe:
Bring a large pot of salted water to a boil. Add the Ditalini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
In a small bowl, whisk together the lemon juice, olive oil, mayo, Mediterranean seasoning, garlic powder, salt, and pepper until smooth and creamy.
While the pasta cooks, dice the cucumber, cherry tomatoes, chicken, and red onion. Set aside.
In a large mixing bowl, combine the cooled pasta, diced vegetables, chicken, white beans, and crumbled feta.
Pour the dressing over the salad and toss everything together until well coated.
Refrigerate for at least 30 minutes to let the flavors meld. Serve cold or at room temperature. Enjoy as a side or a main dish!
