This fresh and flavorful salad is super easy and perfect for summer! It works great as a light meal for a few people or a side dish for a group.
SERVING SIZE: 3-4 SERVINGS
For the dressing:
1/4 cup tahini, unsalted
1.5 tablespoons soy sauce
1 tablespoon maple syrup
1 lime, squeezed
1/2 teaspoon minced garlic
1/4 teaspoon sesame oil
2 tablespoons water (to thin)
For the salad:
2 cups green cabbage, finely chopped
1 cup purple cabbage, finely chopped
1 cup cucumber, finely chopped
1/2 cup green onion, diced
1 1/2 cups rotisserie chicken, shredded finely
The recipe:
In a medium bowl, whisk together the tahini, soy sauce, maple syrup, lime juice, minced garlic, and sesame oil until smooth and creamy. Add water to thin it out for better sauce consistency.
Chop the green and purple cabbage, cucumber, and green onions as directed. I like to say “micro-chop” because I love the dice all the ingredients extra fine for this. Place all the chopped veggies into a large mixing bowl.
Add the finely shredded rotisserie chicken to the bowl with the vegetables.
Pour the tahini lime dressing over the salad mixture. Use tongs to thoroughly toss everything together until evenly coated.
Give it a taste and adjust seasoning if needed (a little extra soy sauce or lime juice can brighten it up).
Serve immediately, or refrigerate for 15–30 minutes to let the flavors meld. Enjoy as a light lunch, a side, or a protein-packed dinner!
