Quinoa Turkey Meatballs & Pesto Zoodles

Here is what you will need:

  • 1 lb ground turkey
  • 1/2 onion, chopped
  • 1 clove of garlic
  • 1 spoon of cream cheese
  • 1 cup cooked quinoa
  • 1/4 cup grated Parmesan cheese
  • 2 medium zucchinis
  • 1 handful of crushed almonds
  • 1/4 cup pesto
  • Salt and pepper to taste

Makes approximately 2-3 servings!

Mix together your ground turkey, onion, quinoa, Parm cheese and salt and pepper in a bowl and then roll the mix into 1 inch round meatballs. Then pan fry your meatballs in olive oil until they are completely browned on the outside and cooked through!

 

 

 

 

 

 

 

 

While the meatballs are cooking you can either get pre cut zoodles or use a spiralizer to cut your zucchini into noodle shapes. In another frying pan, cook the zoodles in olive oil for about 5 minutes or until they have softened. Add a handful of crushed almonds for a little crunch and then add in your pesto. I used vegan kale and cashew pesto from Trader Joe’s but feel free to use whatever kind of pesto you like!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

You can top with red pepper flakes, salt/pepper and basil! Hope you guys enjoy this meal as much as I did!!
