This bake is so perfectly creamy and packed with so many nutrients. I think I’ve really outdone myself with this one – I’m getting so hungry all over again just writing this out😮💨 And the best part? It’s one pan – perfect for those weeknight dinners (& for meatless Monday too ;))

The recipe:
Preheat the oven to 375°F. Prepare the vegetables by dicing the cherry tomatoes, red onion, and asparagus.
In a baking dish, toss the diced vegetables with 1 tablespoon of olive oil, Mediterranean seasoning, a squeeze of lemon juice, and a sprinkle of garlic powder, salt, and pepper.
Bake for 20 minutes until slightly softened.
Remove the baking dish from the oven and stir in the uncooked orzo, water, spinach, another squeeze of lemon, and additional seasonings to taste. Mix well.
Return the dish to the oven and bake for 15 minutes, or until the orzo is tender and the liquid is mostly absorbed. Stir halfway through if needed.
Sprinkle the feta cheese over the top and drizzle with the remaining tablespoon of olive oil. Mix well.
Bake for another 4-5 minutes until the feta softens and the dish is heated through.
Top off with parsley. Enjoy this vibrant and creamy Mediterranean-inspired meal!

Mediterranean blend seasoning –

Instructions
