One Pan Low Carb Pasta

In this recipe, I am using hearts of palm pasta from Trader Joes. It’s such an amazing alternative to real pasta. Side note: I have a ton of pasta in my diet, and already ate pasta today for lunch! Nothing against it, just trying to do a little healthy swap for dinner tonight.


The ingredients:

1/2 onion, diced

2 chicken sausages, sliced

1 large tomato, diced

Drizzle of olive oil

2 garlic cloves

1/2 tsp italian seasoning

1 package of hearts of palm pasta (the one I’m using is 9oz)

2 cups of spinachJuice from

1/2 lemon

Salt and pepper to taste

Grated parmesan

The recipe:

Add onion, chicken sausage and tomato to a frying pan on medium heat. Then add olive oil, garlic, Italian seasoning and cook for about 10 minutes or until your sausage is cooked. 

Then add in your hearts of palm pasta (it’s already cooked so it just needs to be heated up for a few minutes).

Lastly, add in your spinach and cook for another minute or until it has cooked down.

Add lemon juice, salt and pepper to taste and some freshly grated parmesan! You could also add a little more olive oil or even pesto here too but the flavors are already amazing so you definitely don’t have to!
