This dish is so freakin yummy and the perfect for big groups! I love that not only is it low carb and one pan, but also super budget friendly too!!
The Recipe:
Preheat your oven to 375 degrees.
Prep your veggies by dicing your onions and slicing your green onions. If you’re using canned black beans and corn, make sure to drain the liquid and rinse!
In a hot skillet, drizzle olive oil and cook your red onions for a appx 2-3 minutes, then add in your ground beef and your seasonings of garlic powder, salt, pepper, chili powder, and fajita / taco seasoning.
Once your beef has thoroughly cooked, add in your corn, cauliflower rice, black beans with a pinch of salt and pepper to taste and mix with your beef and onions.
Optional: After a few minutes, top with your cheese and place in the oven to bake for around 5 minutes, or til the cheese has melted to your liking! DEFINITELY make sure your pan is oven safe before just putting straight into the oven!!!
Carefully remove from the oven and top with green onions + any leftover red onions. Thinly slice and avocado and place the pieces on top with a dollop of greek yogurt (as a healthy sour cream sub) and enjoy!! xx
