Mini Twice Baked Potatoes

Super easy app idea!

Here’s what you need:

3 cups of mini potatoes

1/3 cup sour cream

1/2 cup shredded cheese (plus more for topping)

2 tbsp butter

1/2 tsp garlic salt

Salt and pepper to taste

6 slices of bacon

1/2 cup chopped green onion

Here’s how you make it:

Boil potatoes for about 6-7 minutes or until they are soft enough to scoop out the inside

Then, cut the potatoes in half and carve out the potato from the skin leaving a thin layer so that it keeps it shape

Drizzle with olive oil and bake the skin for about 12 mins @ 400 degrees until they are crispy

While the potatoes are in the oven, cook bacon until super crispy!!

Now it’s time to make the filling: mix the potatoes, bacon, sour cream, cheese, butter, green onion, garlic salt, salt and pepper

Add the filling to the skins and top with a little bit of cheese and put back in the oven for 5 minutes!
