This simple chicken & broccoli dish is SO simple and it’s one of Lane’s fave dishes!! It is packed with protein and low carb and actually fills you up! Pair this dish with pasta or rice if you’re looking for something heartier, but it’s fantastic on its own!
The recipe:
Heat a skillet over medium-high heat. Add a drizzle of olive oil, your ground chicken, garlic powder, onion powder, salt, and pepper.
Cook the chicken until no longer pink, about 5-7 minutes.
While the chicken cooks, prepare the broccoli by chopping it into even pieces.
Once the chicken is cooked through, remove it from the skillet and set aside.
In the same skillet, add the broccoli. Add a splash of water (or broth for extra flavor) and cover with a lid. Steam for 3-4 minutes, then remove the lid to allow any remaining moisture to evaporate.
Return the cooked chicken to the skillet with the broccoli.
Add half and half, Parmesan cheese, and pesto to the skillet.
Mix well and bring to a simmer. Let it simmer for 2-3 minutes to allow flavors to meld, then serve and enjoy!! xx
