A satisfying, balanced breakfast sandwich that’s both easy to make and packed with nutritious ingredients. Perfect for a busy morning or a leisurely weekend brunch, this sandwich brings together a runny egg, melty white cheddar, creamy avocado, fresh veggies, and a nutty slice of sesame Ezekiel bread!!
The recipe:
Heat a small skillet over medium heat and lightly coat with olive oil or nonstick spray. Crack the egg into the skillet and season with salt and pepper.
While the egg is cooking, thinly slice the tomato and red onion, and prepare the avocado.
When the egg is nearly cooked, flip it and top with the slice of white cheddar. Cover the skillet briefly to melt the cheese faster without overcooking the egg.
Meanwhile, toast the sesame Ezekiel bread to your desired crispness.
Spread a thin layer of mayo on one or both slices of bread, if desired.
Assemble the sandwich: place the cheesy egg on the bottom slice of bread, then top with tomato slices, avocado, red onion, and arugula.
Top with the other slice of bread, slice in half if you like, and enjoy!! xx
