Healthy Breakfast Sandwich

A satisfying, balanced breakfast sandwich that’s both easy to make and packed with nutritious ingredients. Perfect for a busy morning or a leisurely weekend brunch, this sandwich brings together a runny egg, melty white cheddar, creamy avocado, fresh veggies, and a nutty slice of sesame Ezekiel bread!!

Ingredients
  

  • 1 large egg
  • Salt and pepper to taste
  • 2 slices sesame Ezekiel bread
  • 2-3 thin tomato slices
  • 2-3 thin red onion slices
  • 1 slice white cheddar cheese
  • 1/4 avocado sliced or mashed
  • A handful of fresh arugula
  • 1 teaspoon mayo optional
  • Olive oil or nonstick spray for frying

Instructions
 

  • Heat a small skillet over medium heat and lightly coat with olive oil or nonstick spray. Crack the egg into the skillet and season with salt and pepper.
  • While the egg is cooking, thinly slice the tomato and red onion, and prepare the avocado.
  • When the egg is nearly cooked, flip it and top with the slice of white cheddar. Cover the skillet briefly to melt the cheese faster without overcooking the egg.
  • Meanwhile, toast the sesame Ezekiel bread to your desired crispness.
  • Spread a thin layer of mayo on one or both slices of bread, if desired.
  • Assemble the sandwich: place the cheesy egg on the bottom slice of bread, then top with tomato slices, avocado, red onion, and arugula.
  • Top with the other slice of bread, slice in half if you like, and enjoy!! xx
