I LOVE takeout fried rice! I’m not trying to make this a super healthy version of fried rice with this recipe. I’m just making smaller changes to make it just a little bit healthier than the takeout version (and honestly you probably wouldn’t even notice that big of a difference)! I just added a few extra vegetables and did a 1:1 ratio of cooked white rice to cauliflower rice… So many veggies compared to normal fried rice! And the crispy bacon bits truly make this recipe NEXT LEVEL!!
I know fried rice sounds like it would be such a hassle to make, but trust me, it’s really not! Hope you love it just as much as I do!
Here’s what you need:
4-6 pieces of bacon
1 cup cooked white rice (best if refrigerated overnight and frozen rice works too)
1/2 onion diced
1/2 cup peas
1/2 cup diced carrots (I used 1 cup frozen peas/carrots combined)
1 cup chopped cabbage
1 clove of garlic
1 tsp olive oil
2 eggs
1 cup cauliflower rice
1 tbsp soy sauce
1/4 tsp sesame oil
Seasoning: garlic powder and onion salt
Here’s how you make it:
First, cook your rice according to the package
Next, cook up your bacon in a frying pan to your liking (I like mine EXTRA crispy)
Then, dice up your onions and cabbage
Add frozen peas & carrots, onion, cabbage into a frying pan with one clove of crushed garlic and a drizzle of olive oil (I threw my veggies in the same pan that I cooked my bacon in. I did get rid of most of the grease but kept a little on the bottom for amazing flavor). Cook the veggies on medium heat for about 10 minutes
Then add cauliflower rice, stir for 3 minutes, then add white rice and mix until everything is evenly combined!
Next, add 2 eggs on the side (in the same pan) and scramble them up and then mix in with other ingredients
Then added crumbled bacon, sesame oil, soy sauce, garlic powder onion powder and mix it all together, until well combined (side note: butter is incredible in this, totally optional, but I highly suggest it)!
