For the Homemade Sloppy Joe Sauce
First, lightly peel (aka not fully taking off the skin off) and dice up the sweet potatoes and add to a baking sheet with some olive oil, lawry's salt, garlic powder and chili powder. Bake at 425 degrees for 20-25 minutes.
For the sauce: add all your diced carrots and onion to a pan and simmer for about 5 minutes.Then add the diced carrots and onions to the sauce and simmer for about 8-10 minutes.
Add in the ground turkey and break it up so you have nice and small pieces, then simmer for about 10 more minutes until the ground turkey is fully cooked.
Take the sweet potatoes out of the oven and dice up some lettuce.
Now it's time to plate: add a handful of your diced lettuce to a bowl with some sweet potatoes. Add in your turkey sloppy joe mixture and top with some avocado and diced green onions!
